The recipe is inspired by the crispy rice sushi served as an appetizer at cult restaurant Nobu. And here’s how it works: Basic recipe with tuna
First, the sushi rice is cooked and seasoned with rice vinegar, sesame oil and mirin. Meanwhile, marinate the sliced tuna in rice vinegar, soy sauce and sriracha. Brush the waffle with oil and then pour over the rice. Now you have to be patient – it took a few minutes for the rice to be so crispy that you could pull it out of the waffle iron in one piece. When the time comes, spread a dollop of wasabi around the edges of the waffle and top with marinated tuna. Garnish with chopped onion and sliced cucumbers and finish with sriracha, crumbled nori and white sesame seeds.
