If you can’t stop by your Indian supermarket right now, here’s a quick recipe for you to make at home Pav Bhaji Masala close:
• 4 THE Coriandersamen
• 1 tablespoon cumin seeds
• 1 in Fenchelsam
• 6 red Kashmiri chillies, less if using a hotter variety
• 5 cm Zimstange
• 6 copies
• 4 green cardamoms
• 1 teaspoon of pepper
• 2 TL Amchur (dried mango powder)

Dry toast all the above spices in a pan over medium-high heat. Then remove the pan from the heat and let the spices cool. Roasted spices along with 2 tbsp Amchur (dry raw mango powder) in a spice grinder and grind to a fine powder. Store in an airtight container.

Bhaji It lasts for 2-3 days when stored in an airtight container in the refrigerator. Reheat in a pan or microwave before serving.
Bhaji it freezes well like any other curry. Portion into a freezer safe container and freeze for 3-4 months.
• After freezing, thaw for 2-3 hours and then heat again in the microwave. You can also use fresh Tadka (Tempering) to make it completely cool.
